Ingredients

- 6 slices toast, preferably stale bread
- 2 eggs
- 1 cup milk
- 1 tablespoon granulated sugar
- ½ tsp pure vanilla extract
- ½ tsp ground cinnamon
- 6 strawberries
- 4 tablespoons walnuts crushed
- ½ lemon juiced
- mint leaves to garnish – optional
Instructions:
- Start by creating a cooking dish with your foil or using a premade foil baking dish. Once the baking dish is formed, spray it with cooking spray or oil it with butter.
- Arrange your bread in the bottom of the dish.
- And a small bowl, whisk together the eggs and milk. Then add a little bit of sugar, the vanilla extract, and a pinch of cinnamon.
- Carefully pour the egg and milk mixture over the bread, being sure to coat it evenly.
- Wash and dry all of your produce.
- Carefully dice your strawberries and chopped walnuts if they’re not already crashed.
- Layer the diced strawberries over the bread, along with the walnuts and another sprinkle of cinnamon.
- Carefully seal up the foil baking dish, leaving plenty of room above the bread to allow the air to circulate.
- Place the foil packet over your campfire and cook until the toast is slightly crispy and the egg and milk mixture is mostly absorbed.
- Serve topped with a squeeze, a fresh lemon, and a sprinkle of chopped mint leaves.
